Application of lipidomics in nutrition research

Abstract

Lipidomics measures the composition of intact individual lipid molecular species in biological systems, and the field has been driven through great advances in mass spectrometry instrumentation and applications. This chapter introduces recent advances in lipid analysis by a variety of lipidomics platforms and summarises representative applications of lipidomics for nutritional research and food quality. We believe that lipidomics, as a powerful tool as well as a research field itself, should allow the identification of disease biomarkers and the probing of signalling and metabolic processes associated with nutrition.
